With Spinach and Ajwain

Preparation:
Dice 300g of spinach
Blanch in boiling water
Heat half a teaspoon of ghee in a thick bottomed pan on low heat
Add one teaspoon of crushed ajwain seeds into the ghee and let it splutter
Add the blanched spinach and stir
Add half a teaspoon of ginger garlic paste, turmeric, amchur or tomato paste and salt to add taste
You may add two split green chillies for taste
Sprinkle water, cover and cook for about 10 minutes till the spinach is soft, does not smell raw and is blended with spices
